First Harvest Feedback 2019!

Chardonnay & Pinot Noir MCC Results

Purpose of the table:

  • To give you, the winemaker, feedback on sample data for Chardonnay and Pinot Noir as an indication of what to expect this harvest season.
  • You can compare your results with the data we collected from each specific region.
  • You will be regularly updated throughout the harvest season, where we hope to help you predict fermentation problems that might surface.

Data will be collected every week, to give you a regular update.

Feedback on Data

    • High Total Acidity (TA) and low pH is seen for Chardonnay and Pinot Noir.
    • Percentage Ammonia (NH4) for Chardonnay is higher than what we are normally used to, in relationship with the total YAN result.
    • Percentage Ammonia (NH4) for Pinot Noir is considered normal in relationship with the total YAN result.
    • Apart from certain blocks, the relationship between glucose and fructose is balanced.
    • When the NOPA fraction of the YAN is lower than the Ammonia fraction, it could lead to deficiencies in yeast nutrients. This in turn could lead to the production of H2S during fermentation.
